- 300 gramos en topinambur
- jugo de limón
- 2 pizcas de sal
- 1 diente de ajo
- 1 vaso de caldo de verduras
- 1 cucharada de perejil
- aceite de oliva virgen extra
Las alcachofas o topinambur salteado son una guarnición simple, fácil y llena de sabor. La alcachofa de Jerusalén no es muy popular en Italia, pero es una verdadera lástima. Esta maravillosa planta, también llamada alcachofa de Jerusalén o nabo alemán, combina diferentes sabores en un tubérculo con una textura similar a la de las patatas. La alcachofa de Jerusalén es excelente para diabéticos y celíacos, es rica en nutrientes y beneficiosa para nuestra salud. ¿Cómo cocinarlo? ¡Es simple! ¡Como patatas! Se pueden hacer sopas, risottos, cremas y salteados, pero sin duda la alcachofa de Jerusalén más sencilla de degustar se muestra en la receta que os propongo hoy, las alcachofas de Jerusalén salteadas, excelentes para acompañar cualquier tipo de plato principal.
Elaboración – Alcachofas de Jerusalén salteadas
1. Para preparar alcachofas de Jerusalén salteadas, primero limpie topinambur raspándolo y quitando los puntos duros. Corta la alcachofa de Jerusalén con una mandolina en rodajas finas, pero no demasiado.
2. Espolvoree las rodajas de topinambur con el jugo de limón. Pelar elajo, cortarlo finamente y freírlo en la sartén con laaceite. Agrega la alcachofa de Jerusalén y revuelve bien para darle sabor con el aceite y el ajo.
3. Vierta sobre el caldo vegetal y cubrir con la tapa. Cocine durante unos 15-20 minutos, sin embargo, hasta que‘agua no se evapora. Corta finamente el perejil y únete al topinambur.
